Vegetable Pasta

A colorful and nutritious vegetable pasta dish, packed with fresh flavors and textures. Perfect for a quick weeknight meal!

Ingredients:

  • 200g pasta
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 50g spinach

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  3. Add the diced carrot and zucchini to the skillet. Cook for about 5 minutes, stirring occasionally until the vegetables are tender.
  4. Stir in the chopped tomatoes and cook for another 3-4 minutes until they soften.
  5. Add the spinach and cooked pasta to the skillet. Toss everything together and cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste, and serve hot.
