  • 1 cup spinach, chopped
  • 2 tablespoons olive oil

Instructions:

  1. In a bowl, whisk the eggs with salt and pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in the diced tomato and chopped spinach, cooking until the spinach wilts.
  5. Pour the whisked eggs over the vegetables in the skillet.
  6. Cook until the edges start to set, then gently lift the edges with a spatula, allowing uncooked egg to flow underneath.
