  • 3 eggs
  • 1 small zucchini, diced
  • 1 small tomato, chopped
  • 1/2 onion, diced
  • Salt and pepper to taste
  • Butter for cooking

Instructions:

  1. In a bowl, whisk the eggs and season with salt and pepper.
  2. Heat butter in a non-stick pan over medium heat.
  3. Add the diced onion and sauté for 2-3 minutes until soft.
  4. Add the zucchini and tomato, and cook for another 2-3 minutes.
  5. Pour the whisked eggs over the sautéed vegetables. Cook until the edges start to set, then gently lift the edges with a spatula to allow the uncooked egg to flow to the edges.
  6. Cook until the eggs are fully set, then fold the omelette in half and serve warm.
