  • 3 eggs
  • 1 small onion, diced
  • 1 small tomato, diced
  • 1/2 cup spinach, chopped
  • Salt and pepper to taste
  • Butter for cooking

Instructions:

  1. In a bowl, crack the eggs and whisk them until well blended.
  2. Add salt and pepper to the eggs and mix well.
  3. In a non-stick skillet, melt a small amount of butter over medium heat.
  4. Add the diced onion and sauté until translucent, about 2-3 minutes.
  5. Stir in the chopped spinach and diced tomato, cooking for another 2-3 minutes until the spinach wilts.
  6. Pour the beaten eggs over the vegetable mixture, tilting the skillet to ensure even distribution.
  7. Cook for 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
  8. Using a spatula, gently fold half of the omelette over the other side and continue cooking for another minute to firm up the center.
  9. Slide the omelette onto a plate and serve warm.
