Ingredients:

  • 4 eggs
  • 100g spinach
  • 100g bell pepper
  • 50g onion
  • 1 tablespoon of butter

Instructions:

  1. In a bowl, whisk the eggs until well beaten. Season with salt and pepper to taste.
  2. Heat butter in a non-stick frying pan over medium heat.
  3. Add chopped onion and bell pepper to the pan. Sauté until softened, about 5 minutes.
  4. Add the spinach and cook until wilted.
  5. Pour the beaten eggs over the sautéed vegetables. Cook until the edges start to set.
  6. Gently lift the edges of the omelette to let uncooked egg flow underneath.
  7. Once the omelette is nearly set, fold it in half and cook for another minute or two.
  8. Serve hot, optionally garnished with fresh herbs.
