  • salt to taste
  • pepper to taste
  • 1 tablespoon butter

Instructions:

  2. In a non-stick skillet, melt the butter over medium heat.
  3. Add the diced onion and sauté until translucent.
  4. Stir in the chopped spinach and diced tomato, cooking until the spinach wilts.

  6. Gently lift the edges and tilt the pan to allow uncooked eggs to flow underneath.
