Vegetable Omelette

Ingredients:

  • 2 eggs
  • 50g spinach
  • 50g bell pepper
  • 30g onion
  • 30g cheese
  • salt
  • pepper
  • 1 tablespoon olive oil

Instructions:

  1. In a bowl, whisk together the eggs with a pinch of salt and pepper. Set aside.
  2. Heat the olive oil in a non-stick frying pan over medium heat.
  3. Add the chopped onion and bell pepper to the pan and sauté until softened.
  4. Stir in the spinach and cook until wilted.
  5. Pour the beaten eggs over the vegetables and cook until the eggs are set. You can cover the pan to help the eggs cook evenly.
  6. Sprinkle cheese on top and let it melt for a minute before folding the omelette in half.
  7. Serve hot, garnished with additional pepper if desired.
