Vegetable Omelette

A delicious and healthy vegetable omelette made with fresh ingredients perfect for breakfast or brunch.

Ingredients:

  • 3 eggs
  • 1 small onion, chopped
  • 100g spinach, chopped
  • 1 medium tomato, diced
  • 50g cheese, grated
  • Salt and pepper to taste
  • Butter for frying

Instructions:

  1. In a bowl, whisk the eggs until well beaten. Add salt and pepper to taste.
  2. Heat a non-stick skillet over medium heat and add butter.
  3. Add the chopped onion to the skillet and sauté until translucent.
  4. Add the spinach and cook until wilted.
  5. Stir in the diced tomato and cook for a couple of minutes.
  6. Pour the beaten eggs over the vegetables and let cook without stirring for a few minutes.
  7. Sprinkle the grated cheese on top and cover the skillet to let the cheese melt and the eggs finish cooking.
  8. Once the eggs are set, carefully slide the omelette onto a plate and serve hot.
