Ingredients:

  • olive oil

Instructions:

  1. Chop the carrot, potato, onion, garlic, tomato, and spinach into small pieces.
  2. In a large pot, heat olive oil over medium heat and add the chopped onion and garlic. Sauté until onion is translucent.
  3. Add the chopped carrots and potatoes to the pot and cook for a few minutes, stirring frequently.
  4. Pour in some water (about 1 liter) and bring to a boil.
  5. Add the chopped tomato and spinach, then reduce heat to a simmer.
  6. Season with salt and pepper to taste, and let it simmer for about 20-25 minutes until vegetables are tender.
  7. Serve hot with a sprinkle of fresh herbs if desired.
