Vegetable Medley Soup

A healthy and hearty vegetable medley soup packed with nutrients from fresh vegetables, perfect for any day!

Ingredients:

  • 2 medium carrots, chopped
  • 1 large potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 can diced tomatoes (400g)
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add diced carrots and potatoes, cooking for another 5-7 minutes.
  3. Stir in the diced zucchini and canned tomatoes, cooking for a few minutes until slightly softened.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for around 20 minutes or until all vegetables are tender.
  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
