A healthy and hearty vegetable medley soup packed with nutrients from fresh vegetables, perfect for any day!
Ingredients:
- 2 medium carrots, chopped
- 1 large potato, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 can diced tomatoes (400g)
- 1 liter vegetable broth
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
- Add diced carrots and potatoes, cooking for another 5-7 minutes.
- Stir in the diced zucchini and canned tomatoes, cooking for a few minutes until slightly softened.
- Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for around 20 minutes or until all vegetables are tender.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
