Ingredients:

  • spinach
  • vegetable stock

Instructions:

  1. Chop the carrot, potato, onion, and garlic into small pieces.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the carrots and potatoes to the pot, followed by diced tomatoes and vegetable stock. Bring to a boil.
  4. Reduce the heat and let it simmer for about 20-30 minutes until the vegetables are tender.
  5. Stir in the spinach and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste before serving.
