Ingredients:

  • 2 carrots, diced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200°C (392°F).
  2. In a large mixing bowl, combine the diced carrots, sliced zucchini, chopped bell pepper, and chopped onion.
  3. Drizzle with olive oil and season with salt and pepper. Toss until the vegetables are evenly coated.
  4. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
