Ingredients:
- 250g potato
- 100g zucchini
- 50g onion
- 2 cloves garlic
- 2 eggs
- 100g flour
- salt
- pepper
- sunflower oil for frying
Instructions:
- Grate the potato and zucchini into a large bowl. Squeeze out any excess moisture.
- Finely chop the onion and garlic, then add them to the bowl with the grated vegetables.
- Crack the eggs into the bowl and mix well, then add the flour and season with salt and pepper.
- Heat sunflower oil in a frying pan over medium heat. Scoop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of a spatula.
- Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels before serving.
