Crispy vegetable fritters made with a delightful mix of fresh vegetables, perfect for snacking!

Ingredients:

  • 100g grated carrot
  • 100g grated zucchini
  • 50g chopped onion
  • 50g flour
  • 1 egg
  • salt and pepper to taste
  • oil for frying

Instructions:

  1. In a bowl, combine the grated carrot, grated zucchini, and chopped onion.
  2. Add flour and mix well. If the mixture is too dry, you can add a bit of water to help bind it.
  3. Crack the egg into the mixture and season with salt and pepper to taste. Mix until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Spoon dollops of the mixture into the pan, flattening them slightly to form patties.
  6. Fry until golden brown on both sides, about 4-5 minutes per side.
  7. Once cooked, drain on paper towels and serve warm.
