Vegetable Frittata

A delicious and healthy Vegetable Frittata perfect for breakfast or brunch, packed with fresh vegetables and eggs.

Ingredients:

  • 4 eggs
  • 1 zucchini
  • 1 bell pepper
  • 100g spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a frying pan, heat olive oil over medium heat.
  3. Add diced zucchini and bell pepper, and sauté until softened.
  4. Add spinach and cook until wilted.
  5. In a bowl, beat the eggs and season with salt and pepper.
  6. Pour the eggs over the vegetables in the frying pan.
  7. Cook on the stove until the edges are set, then transfer to the oven.
  8. Bake for 15-20 minutes or until the frittata is fully cooked and golden on top.
