A deliciously savory focaccia bread infused with garden-fresh vegetables, perfect for any meal or as a standalone snack.

Ingredients:

  • 500g flour
  • 10g salt
  • 7g sugar
  • 300ml water
  • 50ml olive oil
  • 100g zucchini
  • 100g onion
  • 100g bell pepper
  • 50g garlic

Instructions:

  1. In a large bowl, mix flour, salt, and sugar together.
  2. In a separate bowl, combine warm water and olive oil.
  3. Slowly add the liquid to the dry ingredients, mixing until a dough forms.
  4. Knead the dough for about 10 minutes until smooth and elastic.
  5. Let the dough rest in a warm place for about 1 hour, or until doubled in size.
  6. Preheat your oven to 220°C (428°F).
  7. Finely chop the zucchini, onion, bell pepper, and garlic, and sauté them lightly in a pan with a bit of olive oil until soft.
  8. Once the dough has risen, punch it down and spread it out onto a baking sheet.
  9. Spread the sautéed vegetables evenly over the top of the dough.
  10. Drizzle with more olive oil and sprinkle with salt and herbs if desired.
  11. Bake in the preheated oven for 20-25 minutes until golden brown and cooked through.
