Vegetable Focaccia

This Vegetable Focaccia is a delicious and colorful bread that combines various vegetables for a flavorful and healthy twist.

Ingredients:

  • 500 grams flour
  • 300 ml water
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  • 1 carrot, grated
  • 1 onion, chopped
  • 100 grams spinach, chopped
  • 100 grams cherry tomatoes, halved

Instructions:

  1. In a large bowl, mix the flour, sugar, and salt together.
  2. Gradually add the water and olive oil, mixing until the dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until it's smooth.
  4. Place the dough in a greased bowl, cover it, and let it rise for 1 hour, or until doubled in size.
  5. Preheat the oven to 220°C.
  6. Once the dough has risen, flatten it into a rectangular shape (or a round shape) on a lined baking tray.
  7. Sprinkle the grated carrot, chopped onion, spinach, and halved cherry tomatoes evenly over the top of the dough.
  8. Using your fingers, make dimples in the dough and drizzle additional olive oil if desired before baking.
  9. Bake for 20-25 minutes or until golden brown.
  10. Allow to cool slightly before slicing and serving.
