Vegetable Focaccia

A rustic and flavorful vegetable focaccia infused with fresh herbs and topped with assorted vegetables. Perfect as a side or light meal!

Ingredients:

  • 500g flour
  • 350ml water
  • 10g salt
  • 2g yeast
  • 100g assorted vegetables (like onion, bell pepper, and zucchini)
  • 30ml olive oil

Instructions:

  1. In a large mixing bowl, combine the flour, salt, and yeast.
  2. Gradually add warm water to the dry ingredients and mix until a sticky dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise for about 1 hour, or until doubled in size.
  5. Preheat the oven to 220°C.
  6. Roll out the dough into a rectangular shape and place it on a baking tray lined with parchment paper.
  7. Drizzle olive oil over the dough and press the assorted chopped vegetables into the surface.
  8. Bake for 20-25 minutes until golden brown and cooked through.
