Vegetable Focaccia

Ingredients:

  • 500g flour
  • 7g yeast
  • 300ml warm water
  • 10g sugar
  • 10g salt
  • 50ml olive oil
  • 1 carrot, grated
  • 1 zucchini, sliced
  • 1 onion, thinly sliced

Instructions:

  1. In a large bowl, mix the warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. Add the flour and salt to the yeast mixture, then stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise for about 1 hour until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. Roll out the dough on a baking tray lined with parchment paper.
  7. Arrange the grated carrot, sliced zucchini, and onion on top of the dough, pressing lightly into the dough surface.
  8. Drizzle with olive oil and sprinkle with salt.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
