This Vegetable Focaccia is a delicious and healthy twist on the classic Italian bread, incorporating fresh vegetables and aromatic herbs.

Ingredients:

  • 500g flour
  • 300ml water
  • 50ml olive oil
  • 10g salt
  • 7g yeast
  • 1 carrot, grated
  • 1 zucchini, sliced
  • 100g spinach

Instructions:

  1. In a large mixing bowl, combine the flour, yeast, and salt.
  2. Gradually add the water and olive oil to the dry ingredients, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Add the grated carrot, sliced zucchini, and spinach to the dough, mixing well to incorporate the vegetables.
  5. Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat your oven to 220°C (430°F).
  7. Once the dough has risen, punch it down and transfer it to a greased baking tray.
  8. Stretch and flatten the dough to fit the tray, then create dimples in the surface with your fingers.
  9. Drizzle with olive oil and sprinkle with salt and herbs of your choice (optional).
  10. Bake in the preheated oven for about 20-25 minutes, or until golden brown.
  11. Remove from the oven and let it cool slightly before slicing and serving.
