Ingredients:

  • 2 medium potatoes
  • 1 medium carrot
  • 1 zucchinni
  • 2 tablespoons olive oil
  • Salt to taste

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Thinly slice the potatoes, carrot, and zucchini using a mandoline or sharp knife.
  3. In a bowl, toss the sliced vegetables with olive oil and salt until they are well coated.
  4. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are crispy and golden brown.
  6. Remove from the oven and let them cool before serving.
