Vegetable Chicken Soup

A hearty vegetable chicken soup full of flavor and nutrition. Perfect for chilly days.

Ingredients:

  • 300g chicken breast
  • 2 carrots
  • 1 potato
  • 1 onion
  • 2 garlic cloves
  • 2 tomatoes
  • 100g spinach
  • 1 liter of water
  • salt to taste
  • pepper to taste

Instructions:

  1. Chop the onion, garlic, carrots, and potato into small pieces.
  2. In a large pot, heat some oil over medium heat and add the onions and garlic. Sauté until they become translucent.
  3. Add the chopped carrots and potatoes; stir for a few minutes.
  4. Add the chicken breast and cook until lightly browned on all sides.
  5. Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot along with the chopped tomatoes and spinach.
  7. Season with salt and pepper to taste, and cook for an additional 5 minutes.
