  • 1 potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 chicken thighs, boneless and skinless, cut into pieces
  • 1 tomato, chopped
  • 1 zucchini, diced
  • 1 liter of chicken broth
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions:

  1. In a large pot, heat some oil over medium heat and add chopped onions and minced garlic. Sauté until fragrant.
  2. Add the diced carrots, potatoes, zucchini, and chopped tomatoes. Stir to combine and cook for a few minutes.
  3. Add the chicken thighs to the pot and pour in the chicken broth, ensuring all ingredients are submerged.
  4. Season with salt and pepper, and bring the soup to a boil. Reduce to a simmer and cover.
  5. Let it cook for about 30 minutes, until the chicken is cooked through and vegetables are tender.
