  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 garlic cloves, minced
  • 150g chicken breast, diced
  • 1 zucchini, diced
  • 1 liter chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat the peanut oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the sliced carrots and diced potatoes, cooking for about 5 minutes.
  4. Add the diced chicken breast to the pot, cooking until the chicken is no longer pink.
