  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat a little oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced carrots, potatoes, and zucchini, and cook for a few minutes.
  4. Stir in the chopped tomatoes and cook until they begin to soften.
