Vegetable Broth Soup

Ingredients:

  • 3 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 250g broccoli florets
  • 1-liter vegetable broth
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
  3. Stir in the diced carrots, potatoes, zucchini and chopped tomatoes, and cook for about 5-7 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender.
  6. Add the broccoli florets and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.
