Ingredients:

  • 2 medium potatoes
  • 1 onion
  • 2 cloves garlic
  • 1 bell pepper
  • 1 zucchini
  • 4 eggs
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Dice the potatoes and boil them in salted water until tender. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the diced onion and garlic; sauté until fragrant.
  3. Add the diced bell pepper and zucchini to the skillet, cooking until tender.
  4. Stir in the boiled potatoes and season with salt and pepper to taste. Cook, stirring occasionally, until everything is heated through and slightly crispy.
  5. Create four small wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking.
