Ingredients:
- 300g flour
- 100g grated carrot
- 100g grated zucchini
- 50g onion, finely chopped
- 2 cloves garlic, minced
- 200ml warm water
- 1 packet yeast
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp olive oil
Instructions:
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
- In another bowl, mix the flour, salt, grated carrot, grated zucchini, chopped onion, and minced garlic.
- Make a well in the center of the dry ingredients and pour in the yeast mixture and olive oil.
- Stir until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl and cover with a cloth. Let it rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and shape it into a loaf. Place it in a greased loaf pan and cover to rise for another 30 minutes.
- Preheat the oven to 180°C (350°F). Bake the loaf for 30-35 minutes or until golden brown and sounds hollow when tapped on the bottom.
- Let cool on a wire rack before slicing.
