This Vegetable Bread is a delightful combination of nutritious vegetables and a fluffy bread base, perfect for sandwiches or to enjoy on its own.

Ingredients:

  • 400g flour
  • 200g potato
  • 100g carrot
  • 1 onion
  • 30g butter
  • 2 eggs
  • 10g sugar
  • 7g salt
  • 7g yeast
  • 200ml milk

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Peel and boil the potato until soft, then mash it.
  3. Grate the carrot and finely chop the onion.
  4. In a large mixing bowl, combine the flour, mashed potato, grated carrot, and chopped onion.
  5. In a small bowl, mix the yeast, sugar, and warm milk; let it sit for 5-10 minutes until bubbly.
  6. Add the yeast mixture, eggs, and melted butter to the flour mixture; knead the dough until smooth and elastic.
  7. Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.
  8. Punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
  9. Let it rise again for about 30 minutes, then bake in the preheated oven for 30-35 minutes until golden brown.
  10. Allow to cool before slicing.
