  • 200g barley
  • 1 large carrot, diced
  • 1 large potato, diced
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 zucchini, diced
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced carrot, potato, and zucchini, cooking for a few minutes until slightly softened.
  4. Add the barley to the pot, stirring well to combine with the vegetables.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat and let the soup simmer for about 30 to 40 minutes until the barley is tender.
