Ingredients:

  • 2 medium potatoes
  • 1 carrot
  • 1 onion
  • 2 eggs
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Peel and dice the potatoes, carrot, and onion into small cubes.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the diced potatoes to the skillet and cook for about 10 minutes, stirring occasionally until they start to soften.
  4. Add the carrot and onion to the skillet, cooking for another 5-7 minutes, until all vegetables are tender.
  5. Create two wells in the hash and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking, about 5 minutes for runny yolks.
  7. Season with salt and pepper to taste, and serve hot.
