Ingredients:

  • 250g chicken breast
  • 150g broccoli
  • 100g bell pepper
  • 200g carrots
  • 3 cloves garlic
  • 2 tbsp peanut oil

Instructions:

  1. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  2. Heat peanut oil in a large skillet over medium-high heat.
  3. Add the chicken pieces and cook until they are browned and cooked through.
  4. Remove the chicken from the pan and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  6. Add chopped broccoli, sliced bell pepper, and julienned carrots to the skillet, and stir-fry for about 5-7 minutes until vegetables are tender-crisp.
  7. Return the chicken to the skillet, stir to combine, and cook for another 2-3 minutes.
  8. Serve hot.
