Vegetable and Chicken Stir Fry
A quick and delicious Vegetable and Chicken Stir Fry that combines healthy vegetables with tender chicken for a satisfying main course.
Ingredients:
- 400g chicken breast
- 200g broccoli
- 150g bell pepper
- 100g carrot
- 150g onion
- 2 cloves garlic
- 2 tbsp sunflower oil
- salt to taste
- pepper to taste
- soy sauce to taste
Instructions:
- Cut the chicken breast into bite-sized pieces and marinate with soy sauce, salt, and pepper for about 15 minutes.
- While the chicken is marinating, chop the broccoli into florets, slice the bell pepper into strips, and julienne the carrot. Dice the onion and mince the garlic.
- Heat the sunflower oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the skillet and sauté until golden brown and fully cooked, around 5-7 minutes.
- Add the diced onion and minced garlic to the skillet and stir-fry for 1-2 minutes until fragrant.
- Add the chopped broccoli, sliced bell pepper, and julienned carrot, stirring well. Cook for an additional 5-7 minutes or until the vegetables are tender-crisp.
- Adjust seasoning with more salt, pepper, and soy sauce if needed.
- Serve hot over cooked rice or noodles if desired.
