Vegetable and Chicken Stir-Fry

A quick and delicious vegetable and chicken stir-fry that's packed with flavor and nutrition. Perfect for a busy weeknight dinner.

Ingredients:

  • 200g chicken breast
  • 2 carrots
  • 1 zucchini
  • 1 bell pepper
  • 2 cloves garlic
  • 30ml peanut oil

Instructions:

  1. Slice the chicken breast into strips and season with salt and pepper.
  2. Heat the peanut oil in a large pan over medium-high heat.
  3. Add the chicken strips and cook until browned and cooked through.
  4. Remove the chicken from the pan and set aside.
  5. In the same pan, add minced garlic, sliced carrots, zucchini, and bell pepper.
  6. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
  7. Return the chicken to the pan and toss everything together for another minute.
  8. Serve hot, optionally with rice or noodles.
