Vegetable and Chicken Stir-Fry

A quick and healthy vegetable and chicken stir-fry that's packed with flavor and nutrients.

Ingredients:

  • 300g chicken breast
  • 1 carrot
  • 1 bell pepper
  • 100g broccoli
  • 2 cloves garlic
  • 200g rice
  • 2 tablespoons sunflower oil
  • salt
  • pepper

Instructions:

  1. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  2. Heat the sunflower oil in a large pan over medium heat. Add the garlic and sauté until fragrant.
  3. Add the chicken pieces to the pan and cook until browned and cooked through.
  4. While the chicken is cooking, chop the carrot, bell pepper, and broccoli into bite-sized pieces.
  5. Once the chicken is cooked, add the vegetables to the pan and stir-fry for about 5-7 minutes until they are tender-crisp.
  6. Meanwhile, cook the rice according to package instructions.
  7. Serve the stir-fry over a bed of rice, garnishing with additional salt and pepper to taste.
