Vegetable and Chicken Stir-Fry
A quick and healthy vegetable and chicken stir-fry that's packed with flavor and nutrients.
Ingredients:
- 300g chicken breast
- 1 carrot
- 1 bell pepper
- 100g broccoli
- 2 cloves garlic
- 200g rice
- 2 tablespoons sunflower oil
- salt
- pepper
Instructions:
- Cut the chicken breast into bite-sized pieces and season with salt and pepper.
- Heat the sunflower oil in a large pan over medium heat. Add the garlic and sauté until fragrant.
- Add the chicken pieces to the pan and cook until browned and cooked through.
- While the chicken is cooking, chop the carrot, bell pepper, and broccoli into bite-sized pieces.
- Once the chicken is cooked, add the vegetables to the pan and stir-fry for about 5-7 minutes until they are tender-crisp.
- Meanwhile, cook the rice according to package instructions.
- Serve the stir-fry over a bed of rice, garnishing with additional salt and pepper to taste.
