Vegetable and Chicken Stir-fry

A delicious and healthy chicken stir-fry packed with vibrant vegetables including carrots, bell peppers, and broccoli, perfect for a quick main course.

Ingredients:

  • 2 chicken breasts
  • 1 carrot
  • 1 bell pepper
  • 100g broccoli
  • 2 cloves garlic
  • 2 tablespoons peanut oil
  • salt to taste
  • pepper to taste

Instructions:

  1. Cut the chicken breasts into thin strips.
  2. Peel and slice the carrot into julienne strips.
  3. Remove the seeds from the bell pepper and slice it into thin strips.
  4. Cut the broccoli into bite-sized florets.
  5. Heat peanut oil in a large skillet or wok over medium-high heat.
  6. Add the garlic and sauté for about 30 seconds or until fragrant.
  7. Add the chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes.
  8. Add the carrots, bell pepper, and broccoli to the skillet and stir-fry for another 3-5 minutes until the vegetables are tender-crisp.
  9. Season with salt and pepper to taste, toss everything to combine, and then serve hot.
