Vegetable and Chicken Stir-fry
A delicious and healthy chicken stir-fry packed with vibrant vegetables including carrots, bell peppers, and broccoli, perfect for a quick main course.
Ingredients:
- 2 chicken breasts
- 1 carrot
- 1 bell pepper
- 100g broccoli
- 2 cloves garlic
- 2 tablespoons peanut oil
- salt to taste
- pepper to taste
Instructions:
- Cut the chicken breasts into thin strips.
- Peel and slice the carrot into julienne strips.
- Remove the seeds from the bell pepper and slice it into thin strips.
- Cut the broccoli into bite-sized florets.
- Heat peanut oil in a large skillet or wok over medium-high heat.
- Add the garlic and sauté for about 30 seconds or until fragrant.
- Add the chicken strips to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add the carrots, bell pepper, and broccoli to the skillet and stir-fry for another 3-5 minutes until the vegetables are tender-crisp.
