Vegetable and Chicken Soup
A hearty and healthy vegetable and chicken soup packed with nutritious ingredients like carrots, potatoes, and spinach, perfect for any meal.
Ingredients:
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 200g chicken breast, diced
- 100g spinach
- 1 liter water
- Salt to taste
- Pepper to taste
Instructions:
- In a large pot, heat a bit of oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
- Add the diced carrots and potatoes to the pot, and stir for a few minutes.
- Pour in the water and bring to a boil. Once boiling, add the diced chicken breast.
- Reduce the heat to low and let it simmer for about 20-25 minutes, or until the vegetables are tender and the chicken is cooked through.
- Add the spinach to the pot and cook for an additional 5 minutes, until the spinach wilts.
- Season with salt and pepper to taste. Serve hot.
