Ingredients:

  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 200g chicken breast, diced
  • 100g spinach
  • 1 liter water
  • Salt to taste
  • Pepper to taste

Instructions:

  1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  2. Add the diced carrots and potatoes to the pot, and stir for a few minutes.
  3. Pour in the water and bring to a boil. Once boiling, add the diced chicken breast.
  4. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the vegetables are tender and the chicken is cooked through.
  5. Add the spinach to the pot and cook for an additional 5 minutes, until the spinach wilts.
  6. Season with salt and pepper to taste. Serve hot.
