Ingredients:

  • 1 carrot, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 200g chicken breast, diced
  • 1 zucchini, diced
  • 1 liter of water
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until fragrant.
  3. Add the diced chicken breast and cook until no longer pink.
  4. Stir in the diced carrot, potatoes, and zucchini.
  5. Pour in the water and season with salt and pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes until the vegetables are tender.
  7. Adjust seasoning if needed and serve hot.
