Vegetable and Chicken Soup
A hearty and nutritious vegetable and chicken soup packed with vitamins and flavor, great for any season.
Ingredients:
- 1 medium carrot, diced
- 1 medium potato, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 200g chicken breast, diced
- 1 liter water
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
- Stir in the diced carrot and potato, cooking for a few minutes.
- Add the chicken breast pieces and cook until they are browned.
- Pour in the water, bring to a boil, and then reduce the heat to a simmer.
- Season with salt and pepper, and let it cook for about 20 minutes or until the vegetables are tender.
- Serve hot, garnished with fresh herbs if desired.
