Vegetable and Chicken Casserole

A hearty Vegetable and Chicken Casserole that's perfect for family meals, packed with nutrients from a variety of vegetables and tender chicken.

Ingredients:

  • 400g chicken breast
  • 200g carrot
  • 200g potato
  • 100g onion
  • 200g broccoli
  • 200g cheese
  • 50g butter
  • 200ml milk
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large pot, boil water and cook diced carrots, potatoes, and broccoli for 5-7 minutes until slightly tender. Drain them and set aside.
  3. In a frying pan, melt butter over medium heat and sauté diced onion until translucent.
  4. Add the cooked chicken breast to the pan and cook until lightly browned, seasoning with salt and pepper.
  5. In a large casserole dish, combine the sautéed onion and chicken with the boiled vegetables.
  6. Pour in the milk and mix well, then top with grated cheese.
  7. Cover the casserole dish with aluminum foil and bake for 25-30 minutes.
  8. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
