Vegetable and Chicken Casserole
A hearty Vegetable and Chicken Casserole that's perfect for family meals, packed with nutrients from a variety of vegetables and tender chicken.
Ingredients:
- 400g chicken breast
- 200g carrot
- 200g potato
- 100g onion
- 200g broccoli
- 200g cheese
- 50g butter
- 200ml milk
- salt
- pepper
Instructions:
- Preheat the oven to 180°C.
- In a large pot, boil water and cook diced carrots, potatoes, and broccoli for 5-7 minutes until slightly tender. Drain them and set aside.
- In a frying pan, melt butter over medium heat and sauté diced onion until translucent.
- Add the cooked chicken breast to the pan and cook until lightly browned, seasoning with salt and pepper.
- In a large casserole dish, combine the sautéed onion and chicken with the boiled vegetables.
- Pour in the milk and mix well, then top with grated cheese.
- Cover the casserole dish with aluminum foil and bake for 25-30 minutes.
- Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
