Vegetable and Chicken Casserole
A delicious and hearty chicken and vegetable casserole that is easy to prepare and packed with flavor. Perfect for a family dinner or meal prep!
Ingredients:
- 300g chicken breast
- 2 medium potatoes
- 1 large onion
- 2 cloves garlic
- 150g broccoli
- 150g carrots
- 1 cup shredded cheese
- 200ml cream
- 2 tbsp butter
- salt
- pepper
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, boil the potatoes and carrots until slightly tender, about 10 minutes, then drain and set aside.
- In a frying pan, melt the butter over medium heat and sauté the chopped onion and minced garlic until fragrant.
- Add the diced chicken breast to the pan and cook until browned and fully cooked.
- In a large baking dish, combine the sautéed chicken mixture, boiled potatoes, carrots, and broccoli florets.
- Pour the cream over the mixture, sprinkle with salt and pepper, and mix well to combine.
- Top with shredded cheese and bake in the preheated oven for 25-30 minutes, or until golden and bubbly.
