Vegetable and Chicken Casserole

A delicious and hearty chicken and vegetable casserole that is easy to prepare and packed with flavor. Perfect for a family dinner or meal prep!

Ingredients:

  • 300g chicken breast
  • 2 medium potatoes
  • 1 large onion
  • 2 cloves garlic
  • 150g broccoli
  • 150g carrots
  • 1 cup shredded cheese
  • 200ml cream
  • 2 tbsp butter
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, boil the potatoes and carrots until slightly tender, about 10 minutes, then drain and set aside.
  3. In a frying pan, melt the butter over medium heat and sauté the chopped onion and minced garlic until fragrant.
  4. Add the diced chicken breast to the pan and cook until browned and fully cooked.
  5. In a large baking dish, combine the sautéed chicken mixture, boiled potatoes, carrots, and broccoli florets.
  6. Pour the cream over the mixture, sprinkle with salt and pepper, and mix well to combine.
  7. Top with shredded cheese and bake in the preheated oven for 25-30 minutes, or until golden and bubbly.
