Vegetable and Chicken Casserole
A delicious and hearty chicken casserole packed with fresh vegetables and topped with melted cheese.
Ingredients:
- 300g chicken breast
- 150g broccoli
- 2 medium potatoes
- 1 onion
- 100g cheese
- 50g butter
- 1 clove garlic
- salt
- pepper
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, boil the potatoes until tender, then drain and mash them with butter, salt, and pepper.
- In a skillet, sauté chopped onion and minced garlic until translucent.
- Add diced chicken breast to the skillet and cook until browned.
- Stir in chopped broccoli and cook for another 5 minutes until it is tender.
- In a baking dish, layer the chicken and vegetable mixture, followed by the mashed potatoes on top.
- Sprinkle grated cheese over the mashed potatoes.
- Bake in the oven for 25-30 minutes or until the cheese is golden and bubbly.
