Vegetable and Chicken Casserole

A delicious and hearty chicken casserole packed with fresh vegetables and topped with melted cheese.

Ingredients:

  • 300g chicken breast
  • 150g broccoli
  • 2 medium potatoes
  • 1 onion
  • 100g cheese
  • 50g butter
  • 1 clove garlic
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, boil the potatoes until tender, then drain and mash them with butter, salt, and pepper.
  3. In a skillet, sauté chopped onion and minced garlic until translucent.
  4. Add diced chicken breast to the skillet and cook until browned.
  5. Stir in chopped broccoli and cook for another 5 minutes until it is tender.
  6. In a baking dish, layer the chicken and vegetable mixture, followed by the mashed potatoes on top.
  7. Sprinkle grated cheese over the mashed potatoes.
  8. Bake in the oven for 25-30 minutes or until the cheese is golden and bubbly.
