Vegetable and Chicken Casserole
A hearty and delicious vegetable and chicken casserole packed with nutrients and flavor. Perfect for a family dinner!
Ingredients:
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken, cooked and shredded
- 1 cup cheese, shredded
- 1 tablespoon butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon sunflower oil
Instructions:
- Preheat your oven to 180°C.
- In a large skillet, heat the sunflower oil over medium heat and add the onions and garlic. Sauté until fragrant and translucent.
- Add the diced potatoes and sliced carrots to the skillet. Cook for about 10 minutes until they start to soften.
- In a large mixing bowl, combine the cooked chicken, sautéed vegetables, butter, salt, and pepper. Stir in half of the cheese.
- Transfer the mixture into a greased casserole dish and sprinkle the remaining cheese on top.
- Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
