Vegetable and Chicken Casserole

A hearty and delicious vegetable and chicken casserole packed with nutrients and flavor. Perfect for a family dinner!

Ingredients:

  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken, cooked and shredded
  • 1 cup cheese, shredded
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon sunflower oil

Instructions:

  1. Preheat your oven to 180°C.
  2. In a large skillet, heat the sunflower oil over medium heat and add the onions and garlic. Sauté until fragrant and translucent.
  3. Add the diced potatoes and sliced carrots to the skillet. Cook for about 10 minutes until they start to soften.
  4. In a large mixing bowl, combine the cooked chicken, sautéed vegetables, butter, salt, and pepper. Stir in half of the cheese.
  5. Transfer the mixture into a greased casserole dish and sprinkle the remaining cheese on top.
  6. Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
