A hearty Vegetable and Chicken Casserole highlighting seasonal vegetables and chicken, baked to perfection.

Ingredients:

  • 2 chicken breasts
  • 2 potatoes
  • 1 onion
  • 2 carrots
  • 2 zucchinis
  • 150 g cheese
  • 100 ml cream
  • 2 cloves garlic
  • salt
  • pepper
  • herbs

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large skillet, heat some butter over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add diced chicken breasts and cook until golden brown.
  4. In a mixing bowl, combine diced potatoes, sliced carrots, and zucchini with salt, pepper, and herbs.
  5. Layer the vegetable mixture in a greased baking dish and top with the chicken.
  6. Pour cream over the top and sprinkle with grated cheese.
  7. Cover with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
