Vegetable and Chicken Casserole
A hearty Vegetable and Chicken Casserole highlighting seasonal vegetables and chicken, baked to perfection.
Ingredients:
- 2 chicken breasts
- 2 potatoes
- 1 onion
- 2 carrots
- 2 zucchinis
- 150 g cheese
- 100 ml cream
- 2 cloves garlic
- salt
- pepper
- herbs
Instructions:
- Preheat the oven to 180°C.
- In a large skillet, heat some butter over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add diced chicken breasts and cook until golden brown.
- In a mixing bowl, combine diced potatoes, sliced carrots, and zucchini with salt, pepper, and herbs.
- Layer the vegetable mixture in a greased baking dish and top with the chicken.
- Pour cream over the top and sprinkle with grated cheese.
- Cover with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
