Vegetable and Chicken Casserole
A hearty and comforting vegetable and chicken casserole packed with flavors from fresh vegetables and seasoned chicken.
Ingredients:
- 2 chicken breasts
- 2 carrots
- 3 potatoes
- 1 onion
- 2 cloves garlic
- 200g broccoli
- 150g cheese
- 200ml milk
- 2 tablespoons butter
Instructions:
- Preheat the oven to 180°C.
- In a large pot, boil water and cook the cubed potatoes for about 10 minutes until slightly tender. Drain and set aside.
- In a skillet, melt the butter over medium heat. Add diced onion and minced garlic, sautéing until softened.
- Add sliced carrots and broccoli florets to the skillet, stirring for about 5 minutes.
- In a baking dish, combine the cooked chicken (diced), boiled potatoes, sautéed vegetables, and milk. Mix well.
- Top with grated cheese and season with salt and pepper.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes until golden and bubbly.
