Vegetable and Chicken Casserole

A hearty and comforting vegetable and chicken casserole packed with flavors from fresh vegetables and seasoned chicken.

Ingredients:

  • 2 chicken breasts
  • 2 carrots
  • 3 potatoes
  • 1 onion
  • 2 cloves garlic
  • 200g broccoli
  • 150g cheese
  • 200ml milk
  • 2 tablespoons butter

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large pot, boil water and cook the cubed potatoes for about 10 minutes until slightly tender. Drain and set aside.
  3. In a skillet, melt the butter over medium heat. Add diced onion and minced garlic, sautéing until softened.
  4. Add sliced carrots and broccoli florets to the skillet, stirring for about 5 minutes.
  5. In a baking dish, combine the cooked chicken (diced), boiled potatoes, sautéed vegetables, and milk. Mix well.
  6. Top with grated cheese and season with salt and pepper.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes until golden and bubbly.
