Vegetable and Chicken Casserole
A hearty and delicious vegetable and chicken casserole, perfect for family dinners and packed with nutrients from fresh vegetables and lean protein.
Ingredients:
- 500g chicken breast
- 3 medium potatoes
- 2 carrots
- 1 onion
- 200g broccoli
- 200g cheese
- 2 tablespoons butter
- 500ml milk
- salt and pepper to taste
Instructions:
- Preheat the oven to 180°C.
- Peel and chop the potatoes and carrots into small pieces.
- Dice the onion and sauté in butter until translucent.
- Add the chicken breast cut into cubes to the pan with the onion and cook until lightly browned.
- Stir in the chopped potatoes, carrots, and broccoli florets, followed by the milk and season with salt and pepper.
- Transfer the mixture into a baking dish and top with grated cheese.
- Bake in the oven for 30-35 minutes until the top is golden and the vegetables are tender.
