Vegetable and Chicken Casserole

A hearty and delicious vegetable and chicken casserole, perfect for family dinners and packed with nutrients from fresh vegetables and lean protein.

Ingredients:

  • 500g chicken breast
  • 3 medium potatoes
  • 2 carrots
  • 1 onion
  • 200g broccoli
  • 200g cheese
  • 2 tablespoons butter
  • 500ml milk
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. Peel and chop the potatoes and carrots into small pieces.
  3. Dice the onion and sauté in butter until translucent.
  4. Add the chicken breast cut into cubes to the pan with the onion and cook until lightly browned.
  5. Stir in the chopped potatoes, carrots, and broccoli florets, followed by the milk and season with salt and pepper.
  6. Transfer the mixture into a baking dish and top with grated cheese.
  7. Bake in the oven for 30-35 minutes until the top is golden and the vegetables are tender.
