Vegetable and Chicken Casserole
A healthy and hearty vegetable and chicken casserole that combines the flavors of fresh vegetables with tender chicken.
Ingredients:
- 300g chicken breast
- 150g broccoli
- 200g carrot
- 250g potato
- 100g cheese
- 500ml milk
- 50g butter
- 1 onion
- 2 cloves garlic
- salt
- pepper
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, melt the butter over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
- Add diced carrots, broccoli florets, and diced potato. Cook for about 5 minutes until the vegetables are slightly softened.
- In a baking dish, layer the sautéed vegetables and cubed chicken breast.
- In a separate bowl, mix milk, salt, and pepper. Pour the mixture over the chicken and vegetables.
- Top with grated cheese and spread evenly.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden and bubbly.
