Vegetable and Chicken Casserole

A healthy and hearty vegetable and chicken casserole that combines the flavors of fresh vegetables with tender chicken.

Ingredients:

  • 300g chicken breast
  • 150g broccoli
  • 200g carrot
  • 250g potato
  • 100g cheese
  • 500ml milk
  • 50g butter
  • 1 onion
  • 2 cloves garlic
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, melt the butter over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  3. Add diced carrots, broccoli florets, and diced potato. Cook for about 5 minutes until the vegetables are slightly softened.
  4. In a baking dish, layer the sautéed vegetables and cubed chicken breast.
  5. In a separate bowl, mix milk, salt, and pepper. Pour the mixture over the chicken and vegetables.
  6. Top with grated cheese and spread evenly.
  7. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden and bubbly.
