Vegetable and Avocado Wrap
A fresh and healthy vegetable and avocado wrap filled with nutritious ingredients, perfect for a light lunch or snack.
Ingredients:
- 1 whole wheat wrap
- 1/2 avocado
- 1/4 cucumber
- 1/2 tomato
- 1/4 bell pepper
- 1/4 cup spinach
- 1 tsp lemon juice
- Salt to taste
Instructions:
- Start by slicing the avocado in half and removing the pit.
- Scoop the avocado into a bowl and mash it with a fork. Add lemon juice and a pinch of salt, mixing well.
- Slice the cucumber, tomato, and bell pepper into thin strips.
- Lay the whole wheat wrap on a flat surface and spread the mashed avocado evenly over the surface.
- Layer the spinach, cucumber, tomato, and bell pepper on top of the avocado spreading them evenly.
- Roll the wrap tightly from one end to the other. Slice it in half if desired, and serve immediately.
