Vegetable and Avocado Wrap

A fresh and healthy vegetable and avocado wrap filled with nutritious ingredients, perfect for a light lunch or snack.

Ingredients:

  • 1 whole wheat wrap
  • 1/2 avocado
  • 1/4 cucumber
  • 1/2 tomato
  • 1/4 bell pepper
  • 1/4 cup spinach
  • 1 tsp lemon juice
  • Salt to taste

Instructions:

  1. Start by slicing the avocado in half and removing the pit.
  2. Scoop the avocado into a bowl and mash it with a fork. Add lemon juice and a pinch of salt, mixing well.
  3. Slice the cucumber, tomato, and bell pepper into thin strips.
  4. Lay the whole wheat wrap on a flat surface and spread the mashed avocado evenly over the surface.
  5. Layer the spinach, cucumber, tomato, and bell pepper on top of the avocado spreading them evenly.
  6. Roll the wrap tightly from one end to the other. Slice it in half if desired, and serve immediately.
