Ingredients:

  • 200g turkey breast
  • 2 medium potatoes
  • 1/2 red onion
  • 1/2 cucumber
  • 1/4 cup cherry tomatoes
  • 1/4 cup feta cheese
  • Handful of fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Cut the potatoes into small cubes, season with salt, pepper, and olive oil, and roast in the oven for 20 minutes or until golden and crispy.
  3. Meanwhile, cook the turkey breast in a pan until fully cooked, then slice it into thin strips.
  4. Chop the red onion, cucumber, cherry tomatoes, and parsley.
  5. In a large bowl, combine the roasted potatoes, turkey breast, red onion, cucumber, cherry tomatoes, feta cheese, and parsley.
  6. Drizzle with olive oil, lemon juice, salt, and pepper, and toss gently to combine.
  7. Serve the salad chilled and enjoy the protein-powered goodness!
