Ingredients:

  • 200g sweet potato, mashed
  • 100g flour
  • 150g blueberries
  • 100g sugar
  • 2 eggs
  • 50g butter, melted

Instructions:

  1. Preheat the oven to 180°C and line a muffin tin with paper liners.
  2. In a bowl, combine the mashed sweet potato, melted butter, and sugar until smooth.
  3. Add the eggs and mix well until fully incorporated.
  4. In another bowl, sift together the flour and fold it into the sweet potato mixture.
  5. Gently fold in the blueberries, being careful not to break them.
  6. Divide the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool slightly before enjoying.
